India Street Food - Part 1

India street food is an explosion of colours and smells, as varied as the humanity it serves. Freshness is a necessity and the fragrance of food is exceptional. Every stall is a surprise both for the food than for the resourcefulness of how it is prepared and served.

The ingeniousness of the road chefs is a source of continuous surprise. Repurposed items become kitchen tools and containers; a little corner on the sidewalk turns into a full restaurant kitchen, supplies are transported timely in street where vehicles of most kinds cannot circulate.

The whole experience is not only delicious but utterly fascinating.
